Our buying policy

We source all our food ethically and responsibly - all our organic suppliers are small local independent farmers, growers and producers, and small independent brands. We never buy anything from big multinationals. By placing regular orders with small farms and producers, we are enabling them to expand and grow their businesses in turn.

  • Currently 80% of all our fresh produce comes from the Home Counties, and we’re striving to increase this to keep our food miles as low as possible.
  • We never air freight anything, and we make sure our suppliers get their produce to us in the most efficient way possible – for example, one of our meat suppliers also collects our fish from Hastings, saving a journey.
  • The Marine Conservation Society (MCS) has approved our strict fish-buying policy and we serve sustainable, local Marine Stewardship Council (MSC) certified fish whenever possible.
  • Our meat comes from small local farms with high standards of animal welfare.
  • We purify our water on the premises to eliminate ‘water miles’ and wastage of glass – in fact we’ve never transported a bottle of water.
  • Wherever possible we don’t buy any packaged good – this is why we don’t stock crisps! (but you’ll find tasty olives, nuts and more…).

Our energy policy

We are passionate about treating the environment with respect – we use methods that are groundbreaking within the restaurant trade. We recycle and re-use building materials, furniture, kitchen waste, tin, paper, card, corks and glass. We compost all our food waste, and the pub’s electricity is solar and wind-generated. We use recycled furniture and green cleaning products and keep a beady eye on all our energy use.
